Temperature and humidity in your environment affect grind particle distribution. Seasonal lot changes between bags from the same roaster are normal. The first shots from a newly opened, rested bag typically pull better than the last shots when the beans are three or four weeks old and beginning to stale.
Pull a Shot Worth Drinking
The beans you choose for espresso set the ceiling for what your machine can produce. Start with something traceable: know the origin, the processing method, the roast date. Give the bag a week to rest before you start pulling shots. Pick a medium to medium-dark roast if you're still building technique, or go single-origin if you're chasing something more specific.
